plumbing

I have a 92 redman that is 76 ft. I am in the process of remodeling the master bath. I have to move the jaccuzzi tub, eliminate the shower stall, move the sink into a custom cabnet and move the toilet alittle. I'm attempting to add a linen closet and a large walk in closet. I need to know if it is ok to redo the water supply in copper or do i need to stay with the plastic? Also all of my supply plumbing is gray, plastic, I was always taught that gray line is NOT suitable for drinking. Is this true.
I have been a carpenter and working in the trades my whole life but this mobile home stuff is very new to me. thank you for any help you can provide.

You have definitely been mis-informed when you say that gray poly waterlines are not suitable for drinking. Otherwise copper and mobile homes do not mix. I'd stay with the pex waterlines. Once you invest in the tools to use pex, you'll be glad you did.
