I don't know how to explain this in correct terms, but here goes
The covering and trim has come loose from my kitchen counter. I don't know what kind of material it is but its the whole sheet. What can I replace this with that is inexpensive yet durable? What kind of trim should I use?
Is it easy enough that I can do it myself?
Can I have motion/sensor lights installed? I want them installed in back and side of MH. No motion lights have ever been installed on my MH.

If the laminate that covers your countertop is still in good shape, glue it back down using contact cement. Put one coat on the countertop and one coat on the laminate. Let dry for however many minutes it shows on the can, then stick together. Once stuck, you cannot move it so be sure you got it positioned right. Lots of different types of trim, so you'll have to describe better what you mean by that.
Should have no problem in putting up a motion sensor light. Buy the very best as the cheaper models never seem to work quite right.

The trim seems to be the same material as top, laminate. The strips are approxmiately 2-1/4" wide. Can I replace strips after I cement down top? If yes, do I use same procedure as above, for laminate top?
