papering over wall board
I own a 17 year old Fleetwood double wide and I absolutely detest the pattern on the wallboard in my kitchen! Is it possible to paint over or paper over ugly wall board?

What you have is pre=wallpapered sheet rock panels. YOu can remove the trib between the panels, tape and mud the seams, then paint or paper over the existing wall paper.
Many builders used vinyl coated pre-papered panels. If the surface of the panels is moisture resistant you may need to gently (rough up) sand the surface for the paint to adhere well.
