Hi
I had a water problem and some of my partical board floors got wet and needs replaced.
My question is after replacing the sub floor that was cut out will I have any problems if I install 1/2" or 5/8" plywood over the partical board floor ? I wanted to do the complete house to firm it up.
Also where I took down the ceiling panels, Will the existing 2 x 2 truss's be able to handle 1/2" drywall ?

Just my semi-learned opinion: in the first case, yes, but if water ever got past the plywood, it would swell and rot the particleboard underneath. As to the ceiling, I think you would be better served with acoustical ceiling tiles, but someone else could weigh in on this. I have seen 1/4" or 3/8" sheetrock at Lowe's in my area - that might be another option.

I've been remodeling a MH that suffered a fire, and I used 3/4 osb (oriented strand board) tongue and groove. It works as well as plywood and is about 2/3's the cost. I would suggest puuting down a layer of paint before adding your floor covering. I did (regular gray garage floor paint) and I have already had a water accident with no damage to the subfloor. If you do have an area where the original subfloor will meet the new you will have to add a layer of 1/8 inch luan to even the floor out due to different thicknesses. As for the cieling, anything less than 5/8 sheetrock will eventually bow with 24" centers. The problem is, this would be too much weight for your rafters unless the home was originally designed for it. Meaning if you don't have sheetrock cielings now don't put them in. I would suggest the cieling tiles. They're lighter and will add a little extra insulation.
