I am working my way to guest bathroom and need to add some treated 2x4 to a section of the wall near the tub. I am looking to replace the tub, and have not be overly impressed with the standard 54" tubs, and was looking to replaced with standard 60" by moving the bathroom wall away from the plumbing out 6 inches. Is anyone aware if this has been done before, and does it present significant plumbing etc. modifications? I am planning on having plumber do the plumbing...

Almost any manufactured home renovation you can imagine is possible but you need to look at all of the factors... not just the plumbing challenges.
As most manufactured homes are installed with a crawl space below, moving plumbing is not going to be your greatest problem. It will be a matter of extending your plumbing lines and bringing them up through the floor at the new appropriate spot.
Before you go crashing down walls you need to be sure that the walls are not critical in supporting the roof. With out seeing an engineers plan or minimally the home itself it is imposable judge if the wall you desire to move is supporting the roof system. Even if it is you can still move it but it could require considerable additional framing support to replace the job that the wall may be doing.
You also need to consider what else might be contained within that wall. For example electrical wiring or the bathroom plumbing vent system, that you would need to re-route.
You would be wise to request advice and plan drawings from the original builder and unless you have done this before bring in an experienced contractor.
