I have put plywood over old floors many times, make sure the old floor isn't buckled, or the plywood will have humps in it. The buckles can be cut out, and then put 2x6 or 2x8 laid on their sides so the wide is up between the joists, and bring the new board up to the same level as the top of existing floor so you don't have ;valleys'. Also, depending on the condition of the old floors, you will probably want to use at least 1/2", may have to go to 5/8". The other thing, make sure you have your seams different than the old floors, and be sure to use screws and hit the joists. A lot of work, but worth the results. Good Luck!
