Drywall is likely way too heavy for this home. The ceiling is likely attached to 1 by 4's only. Rmurray is right, if after 6 years the walls are holding up, don't worry about it. The floors are usually a bigger issue when adding a shingled roof, but they may have been adequately supported.

The duct should be opened up. This is a fresh air make up duct. It should be open into the return air supply. DO NOT cover roof vents in the winter. That is when they are most needed. Winter air is cold and dry while the air in your home is warm and damp. Any space outside of the insulation has to stay cold and dry or else you get condensation.

You can order a modular home with or without whatever you don't like from just a framed shell up to finished. The IRC is much more flexible that way. It will cost more.

The vapor barrier goes on the warm side of the insulation. In Florida, that would be the outside. If your house is 5 years old, it is more likely a stippled ceiling, which is a brushed texture as opposed to the little ball look of popcorn.
